Let it Do What it Do, Baby

The other day, I went down to the garden and was pleased to find, despite the nasty frost we had a couple weeks ago, my tomatoes were still somewhat producing! I picked almost a whole bucket full...

This made me all kinds of happy. I can't wait to make more sauce out of them. And this makes me all kinds of happy as well, because I think I've discovered the secret to making easier, yet totally delicious, marinara sauce... Roasting the tomatoes before you make the sauce. This releases some of the watery tomato juice, as well as making it easy to pluck the skins off of them. This makes me all. kinds. of. happy.

Have I mentioned this makes me all kinds of happy?

I have. Because it does.

If (fingers crossed) I can take the time to document the whole process and I can get my act together enough to actually measure everything I throw in the pot, I'll share the recipe with you.

So, anyway, as I perused the garden, I was also pleased to see that the several varieties of squash seem to have survived as well, as well as the carrots.

(squash) (carrots)

This is good news for my freezer supply of vegetables. I'm so impressed that our garden can take a lickin' and keep on tickin'. Granted, we covered some of the squash and tomatoes, and this is surely what saved them. Now all we have to do is let it 'do what it do' and harvest at our leisure.

I love gardening.

I love gardening too, except this time of year when I hate gardening. I'm soooo overwhelmed.
But thankful.

Your tomatoes are beautiful. If we can hang on for another week without frost I think I'll have tomatoes coming out at the seams.
I love harvest.
So fulfilling.

I love see your pretty jars ready for the canner.
