The Joy of Eating - Luxury Brownies by Coco and Me

Remember back in my post titled 'The Joy of Eating' when I told you that I, while not much of a creative baker myself, was more than willing to go out into the world, acquire, make and taste test baked good for you and the good of all humanity?

Well, I have come across a recipe that I would like to pass along. The recipe is for Luxury Brownies, and I came across it on the website of Coco and Me, the diary of a market stall holder in London.

(I'm assuming this 'stall' refers to culinary treats and such, not like the 'stall' of which I, Farmer Gal, am most familiar with... The kind that is filled with some sort of hairy animal, bits of hay and bedding, and bits of, well, poop. Sorry, that's unappetizing.)

Anyhow, I've been meaning to give this one a try for a few weeks and finally got around to it. Let me tell you, at the very first, when I took them out of the oven and just HAD to try one, hot and steaming, I was not so impressed. It was good, but I was unsure if it was blog-worthy. However, had I been more obedient and listened to the author of Coco and Me, in her instructions that these brownies are best eaten after they have rested for a day or so, my initial impression would have been markedly improved.

You see, she is most certainly correct. I don't know why, but they only seem to get better with time. And I like this particular trait because usually I like brownies less with time. They're rich and fudgy with a strange (but really, really good) lightness about them. Not in the caloric sense, of course, but in texture.

So today, as I was nibbling on the last of these Luxury Brownies, starting to feel anxious about the fact that they soon will be gone, and contemplating how they are, in fact, delicious and blog-worthy, I realized that I had forgotten to take a picture of them the other day. Thus, we are left with a sad little picture of what is left in the corner of my pan. I guess if you want to see what a full pan looks like you'll just have to make a batch for yourself!
